CHICKEN AND GREENS IN COCONUT MILK

2 1/2 lbs chicken cut into serving pieces

2 teaspoons oil

1 1/2 cups coconut cream

1 1/2 lbs greens (spinach, bok choy, watercress, etc. or a little bit of each!!!)

1 meduim sized squash

2 cloves garlic, crushed

1 small piece ginger, finely chopped

1). Remove the skin from the chicken and lightly brown in the oil with 1 clove of the garlic.

2). Add 1/2 cup or so of the coconut cream and the remaining garlic. Simmer for about 10 minutes.

3). Skin and cut the squash into cubes. Add to chicken. Simmer for about 5 more minutes.

4). Add the greens and let simmer for about 15 more minutes.

5). Serve over rice

6). ENJOY! (once again this is the most important part!!!)
